Sweet & Spicy Potatoes
These little sweet and spicy potatoes are good with any meal or just as a mid day snack packed full of flavor and simple to make.
12oz of small potatoes (washed)
2T. Garlic chili past
3 T. Olive oil (Bacon fat or Butter)
Pinch of salt and pepper
In a medium saucepan add cold water and washed potatoes with a dash of salt. Let the potatoes cook until you can poke a knife or fork through them with just a little resistance.
NOTE: Remember the potatoes will cook in the sauce, so you don't want them over cooked at this point.
Once the potatoes are done drain the water off DO NOT RINSE and set them aside.
In a medium skillet on medium heat, add the olive oil and allow it to heat up. Then add the potatoes and all of the other ingredients.
Cook the potatoes for about 3 min on each side or until they begin to caramelize from the honey. Continue to rotate the potatoes until they are well coated with the sauce.
Note: The honey will begin to caramelize fast, once it starts to take on a light amber color. Turn your heat off or add butter to stop this process.
Once the potatoes are fully coated remove from skillet and enjoy
After cooking finish with salt.
